The Keys to a Successful Crawfish Boil

About a month ago I went down to DC to visit some buddies from college who were throwing their annual Crawfish boil. And let me just say if you haven’t experienced a Crawfish boil then you must. They are the best.
Having gone to school in New Orleans I was lucky enough to attend them a couple times a year and I high recommend you try one out. However, there are some keys to throwing a successful Crawfish boil…..
Tons of Crawfish and sent from the Right Place

You can never have enough Crawfish. I’d recomment 50 lbs at the least and make sure you get them from a reputable place. Namely LA Crawfish which sends them Fedex and the critters are still alive!
The Right Spices

The nice thing about LA Crawfish is that they already have a seasoning packet which should work just fine. But for good measure make sure you have the right blend of hot sauces and spices. You want those guys to be potent.
Tons of Water and Equipment – Drain those suckers

One of the most important things to making great Crawfish is extracting the ….you know…poop. So make sure you’re constantly pouring water and draining the fish for at least a half an hour before cooking them. Also, make sure you have a big enough pot as well as boiling system in place.
Plenty of Newspapers

This is what you’re gonna serve them on. Make sure there’s enough to drain all the excess water that comes out when people take off the tails and suck out juices.
Tons of Alcohol

This is a given but I just thought I’d mention. No Crawfish boil is a success without a little drunken craziness.
Corn, Potatoes, Sausage

If you’re not putting these in the overall mix then you are making a big mistake.
